Maghaz Nali Nihari Recipe |

Ingredients:
Beef 500 g
Bone marrow 500 g
Brain beef /goat /lamb
Ginger garlic paste 3 tbsp
Wheat flour 2 tbsp
Funnel seed 1 tsp
Coriander seed 1 tsp
Cumin seed 2 tbsp
Clove 3
Black pepper 1 tsp
Nutmeg 1/4 piece
Mace 1/2 piece
Green cardamom 2
Black cardamom 1
Cinnamon stick 1
Star anise 1
Red chili powder 1 tbsp
Turmeric powder 1 tsp
Salt to taste
Oil 1 cup
Water as required
For garnishing
Green chili 8 to 10
Coriander leaves 1 cup
Ginger sliced for garnish
Method:
- In a spice mixer, add fennel seed, coriander seed, cumin seed, clove, black pepper, nutmeg, mace, green cardamom, black cardamom, cinnamon stick, star anise, black pepper, and grind to make a fine powder.
- In a pot add oil ginger garlic paste, and saute it until the aroma arises add meat and bone stir and until its color changes.
- Add grind masala, add red chili powder, turmeric powder, and salt mix well, and cook for 5 minutes.
- Add water mix well and bring it to a boil, cover and cook on low flame for 3-4 hours and keep stirring in between.
- Discard all bones by taking out the marrow from them and set aside.
- Drain out all serving oil (Terri) and set aside it will work at the time of serving.
- In a bowl add wheat flour and water and whisk well.
- Add half a quantity of wheat flour mixture, stir to combine well cook it for around 15 minutes on low flame.
- Take a pan add water and turmeric powder, and add salt and bring it to a boil.
- Then add brain and allow to cook for 5 minutes now remove from flame.
- Discard all water and rest it for 4 to 5 minutes then devein it.
- Now put the brain in nihari cover the lid and cook for 30 minutes.
- Take out Cook's brain and set it aside.
- Add remaining wheat flour mixture in nihari and mix well, cover, and cook on low flame for 30 minutes.
- In a serving bowl, add nihari and marrow, cooked brain and Terri over it, green chilies, ginger, and coriander leaves.
- Serve with naan.
