Sabudana or Sago(Tapioca Pearl) Kheer Recipe |

Ingredients:
Sabudana or sago( Tapioca Pearl) 1/4 cup
Sugar 4 tbsp
Water 1 cup
Milk 1 cup
Cardamom powder 1/4 tsp
Raisin 2 tbsp
Almond chopped 2 tbsp
Method:
- Wash the sabudana (sago) pearl properly in running water to clear the starch.
- Take a bowl and soak the sabudana pearl in water for 3 to 4 hours to reduce cook time.
- Take thick bottom pan in which you will be making the kheer.
- Put a pan over medium flame, add milk to the pan and continue to cook. keep stirring it till the quantity is reduced to half.
- Add sugar and cardamom powder and simmer till the sabudana have cooked well for 20 to 25 minutes on low medium flame.
- Keep on stirring often so that the cooked sabudana does not stick to the bottom of the pan.
- Switch of the flame ,garnish with chopped dry fruit.
- Serve sabudana kheer warm or chilled.
Note:
- Soaking sabudana in water to reduce the cook time of kheer.
- You can always add your choice of nuts and dry fruit.
