Zarda Recipe/Sweet Rice With Nuts

Ingredients:

Rice(sella)  1/2 kg

Sugar   1/2 kg

Cardamom  3 to 4

Clove   3

Yellow food color  1/2 tbsp

Water as required

Kewra essence  3 drop

Ghee  2 tbsp

For Decoration

Asarhfi (red and green)  125 g

Khoya  1/2 cup

Almond 1/4 cup

Pistachio  1/4 cup

Raisin handful

Coconuts strip 1/4 cup

Gulab gamun 1/2 cup

Cham cham  1/2 cup

Method:

  1. Wash rice with cold water, change water 3-4 times until water is almost clear.
  2. In a pot add water bring it to boil and then add rice, mix in the yellow food color.
  3. Cook until the rice is boiled, about 3/4 cook through (do not over cook).
  4. Strain the rice and set aside.
  5. In another pot add ghee, add cardamom, clove, saute for a minutes. until fragrant.
  6. Add the sugar and water on medium heat stir until sugar completely dissolved.
  7. Add boil rice and mix so that sugar syrup coat the rice evenly.
  8. Cover tightly and cook rice on low heat for about 10 to 15 minutes.
  9. Remove the lid add kewra essence, ashrafiya, khoya, and dry fruit/nuts.
  10. Cover and cook for 8 to 10 minutes.
  11. Once the rice is cooked, add gulab jamun, chum chum for garnishing.
  12. Serve it and add more nuts.

Note

  • Use sella rice for zarda.
  • If  you use basmati rice using best quality basmati rice.
  • Always use big pot.
