Ridge Gourd Recipe/Turai Ki Sabzi

Ingredients: 

Ridge gourd  500 g

Onion  1

Tomatoes   2

Crushed red pepper  1 tsp

Cumin seed  1 tsp

Turmeric  1/2 tsp

Green chili   2

All spice powder  1/2 tsp

Coriander leaves as required

Salt  to taste

Oil   2 tbsp

Method: 

  1. Peel, wash and chop the turai into half inch round disc.
  2. Heat oil in a wok add cumin seed. once the cumin seed slightly brown, add onion  saute onion until they are translucent. 
  3. Add chopped tomatoes, crushed red chili, turmeric powder, salt to taste,cook until raw smell of tomatoes gone off.
  4.  Add Ridge gourd pieces mix well fry 6 to 7 minutes.
  5. Cover and cook on low flame until the ridge gourd cooks reduces in volume, till oil comes on top.
  6. Now add green chili, coriander leave,and all spice powder mix well cover and cook for few minutes.
  7.  Turn of the flame serve with chapati.

Note:

  • Adjust spices according to your test.
  • Do not add too much water as ridge gourd itself will release lots of water when cooked.
