Mixed Vegetable Recipe

Ingredients:

Carrot  1 cup

Capsicum  1 

Peas  1 cup

Funugreek leave 2 tbsp

Potato 250 

Tomato  2 to 3

Onion  1 large

Cumin seed  1 tsp

Chopped garlic 5 - 6

Cauliflower 1 /2 cup

Turmeric powder  1/2 tsp

Red chili powder  1 tsp

All spice powder  1/2 tsp

Green chili chopped 1 tsp

Salt to taste

Oil 2 tbsp

Green coriander 2 tbsp

Ginger slice for garnish

Method:

  1. Wash and cut vegetables.
  2. Heat oil in a pot add onion and cumin, and chopped garlic fry till are golden brown.
  3. Add tomato puree, red chili powder, turmeric powder, salt mix well, saute few minutes.
  4. Cook till the mixture thickens and the oil separates.
  5. Add carrot, capsicum, cauliflower, green peas, potatoes and funugreek leave mix gently, add 1/2 cup water cover and cook on low heat, until all the vegetables are cook through. and water dries out until oil are separate.
  6. Add all spice powder, green chili chopped, coriander leaves, ginger slice.
  7. Serve mix vegetables with rice and roti
