LAUKI KHEER
Lauki kheer Recipe /Bottle Gourd Kheer 

Preparation time 20 minutes

Cook time.           40 minutes

Serve.                   6

Ingredients

Bottle guard 2 cup

Cardamom  powder 1/2 tsp

Sugar 1/4

Ghee 2 tbsp

Almond 10 to 12

Cashew 10 to 12

Full cream milk 1 liter

Pistachio  10 to 12

khoya 1/2 cup

Method:

  1. Cut bottle gourd and deseed and grate with the help of the grater and set aside. 
  2. Heat ghee in a pan.
  3. Add almond and cashew nuts till slightly brown remove nuts from pan and set aside.
  4. Add the grated bottle gourd  and fry for 5 to 6 minutes on low heat until it is softened.
  5. Add milk in the pan.
  6. Once the milk start to boil, simmer the heat and let the kheer thicken.
  7. Cook 20 to 25 minutes.
  8. Keep stirring in between.
  9. Once the kheer has thickened to the desired consistency. add cardamom powder and sugar. 
  10. Cook for 3 to 4 minutes.
  11. Now add  almond pistachio and cashew mix well.
  12. Turn off the flame now add khoya and mix well.
  13. Garnish with pistachio and almond.
  14. Serve hot or chilled.
