Andy Aalo Ka Salan or Egg And Potato Curry Recipe |

Serve 4
Ingredients:
Egg 4
Potato 2 equal size cube
Onion 1 medium slice
Tomato 2 medium chopped
Red chili powder 1 tsp or to taste
Cumin 1 tsp
Turmeric powder 1/ tsp
Coriander powder 1 tsp
Ginger garlic paste 1 tbsp
Oil 1/3 cup
Salt to taste
Water as required
All spice powder 1/4 tsp
Green chili 3 to 4
Coriander leaves 3 tbsp chopped
Method:
- Heat oil in a pan once heated add onion slices stir contentiously to avoid burning
- Once onion are light golden add cumin seed and ginger garlic paste stir for few minutes.
- Add chopped tomatoes saute the tomatoes.
- Add red chili powder, turmeric powder, coriander powder, salt mix well.
- Cover and cook over medium heat till oil comes to the surface.
- Add potatoes and stir the contents until the spices coat the potatoes well.
- Add 1 glass of water. cook on medium flame till the potatoes are completely cooked and water dries out.
- Boil egg in a separate pot about 10 minutes was enough.
- Add eggs and keep stirring till egg are completely mix well.
- Add fresh coriander and green chili and all spice powder and mix well.
- Serve with chapati and rice.
NOTE:
- Your cooking time will vary depending on the size of your cubed potatoes.
