Andy Aalo Ka Salan or Egg And Potato Curry Recipe

Serve                      4 

Ingredients:

Egg 4

Potato  2 equal size cube

Onion 1 medium slice

Tomato 2 medium chopped

Red chili powder 1 tsp or to taste

Cumin 1 tsp

Turmeric powder 1/ tsp

Coriander powder 1 tsp

Ginger garlic paste 1 tbsp

Oil  1/3 cup

Salt to taste

Water as required

All spice powder  1/4 tsp

Green chili 3 to 4

Coriander leaves  3 tbsp chopped

Method:

  1. Heat oil in a pan once heated add onion slices stir contentiously to avoid burning
  2. Once onion are light golden add cumin seed and ginger garlic paste stir for few minutes.
  3. Add chopped tomatoes saute the tomatoes.
  4. Add red chili powder, turmeric powder, coriander powder, salt mix well.
  5. Cover and cook over medium heat till oil comes to the surface.
  6. Add potatoes and stir the contents until the spices coat the potatoes well.
  7. Add 1 glass of water. cook on medium flame till the potatoes are completely cooked and water dries out.
  8. Boil egg in a separate pot about 10 minutes was enough.
  9. Add eggs and keep stirring till egg are completely mix well.
  10. Add fresh coriander and green chili and all spice powder and mix well.
  11. Serve with chapati and rice.

NOTE:

  • Your cooking time will vary depending on the size of your cubed potatoes.
