Ingredients:
Tamarind pulp 1 cup
Date 1 cup dessed
Jaggery 1/2 cup
Water 2 cup
Red chili powder 1 tsp
Dry ginger powder 1 tsp
Cumin powder 1 tsp
Salt to taste
Method:
- In a wok add tamarind, date, jaggery and water .
- Mix and boil for 10 minutes, until date become soft and tender.
- Add cumin powder, ginger powder, red chili powder, salt, mix and mash tamarind and dates.
- Further more, simmer the mixture for 2 minutes.
- Turn of the flame and let them cool completely.
- Now transfer the date and tamarind mixture to the mixer and blend smooth puree.
- Place strainer over a bowl and pour the puree over it.
- Strain puree through the strainer using the backside of spoon to push it through strainer.
- Discard any residue and transfer it to the same pan.
- Boil over medium flame for 4-5 minutes.
- Let it cool down to a room temperature.
- And transfer the prepared khjoor imli chutney into airtight jar and store it in the refrigerator.
- Serve and enjoy!
Note:
- Soak the tamarind and date in water for 20 minutes.
- Tamarind date chutney stays good for a month when refrigerated in a airtight glass jar.
- See clean spoon every time for serving.
