Gajar Ka Halwa Recipe/ Carrot Halwa

Ingredients:

Carrot   1 kg

Milk    1 kg

Sugar  3/4 cup or 12 tbsp

Ghee   4 tbsp

Cardamom   5 to 6 (powder)

Raisin   1 tbsp

Almond  10 to 12  chopped

Pistachio   10 to 12   chopped

Khoya   1/2 cup

Method:  

  1. Rinse, peel and then grate the carrot, either with hand held or in food processor
  2. In a pot add ghee add cardamom powder.
  3. Add grated carrot cover and cook for 5 minutes on medium flame till carrot are soft.
  4. Add boil milk and sugar boil and mix it.
  5. The sugar will melt and get watery.
  6. On a medium flame, uncovered, grated carrots will cook in the milk and the milk start to reduce and evaporate. 
  7. Now cook on high flame and keep on stirring in between.
  8. Add half of khoya and cook further for 8 to 10 minutes. when you see ghee separates from sides of pan.
  9. Now add dry fruit /nuts and gives it good mix and add remaining khoya.
  10. Cover and put it on simmer for 5 minutes.
  11. Gajar ka halwa is ready.
  12. Serve hot, garnish with some chopped dry fruit. while serving.
