Gol Gappe Recipe at home


Preparation time   30 Minutes

Serve                      6 

Ingredients:

Wheat flour  1/2 cup

Semolina 1 cup

Salt to taste

Water as  required

Methi chutney

Tamarind pulp 1 cup

Red chili powder 1 tsp

Jeggery  1/2 cup

Crushed roasted cumin  1/2 tsp

Salt taste

Green chutney:

Mint leave  1 cup

Coriander leave  1 cup

Green chili 3 to 4

Salt  to taste

Water as needed

Lemon juice 1 tbsp

Garlic clove 2 to 3

Sour water

Tamarind water 1 cup

Black salt  1/2 tsp

Carom seed (ajwain)  1 tsp

Cumin roasted crushed 1 tsp

Black pepper  1 /2 tsp

Red chili powder 1 tsp  

Dry ginger powder  1/4 tsp 

Water 1 liter

Salt to taste

Other Ingredients

Chickpea boil 1 cup

Yogurt   1 /2 cup

Boil potato cube 1 cup

Chaat masala as required

Method:

For gol gappas

  1. In a bowl add semolina, flour, salt, add 1/2 cup Luke warm water, add more water as needed. make a soft dough.
  2. Keep a side for 15 minutes.
  3. After 15 minutes make a small balls and roll at the working surface by dusting flour.
  4. Roll out very thin, even  you can see the surface under the roll dough.
  5. Use cookie cutter or bottle cap to cut out the gol gappa.
  6. Heat oil in a wok keep the flame medium-high.
  7. Oil should be very hot add gol gappas and press with spoon until you fell the pressure of the gol gappa.
  8. In the same way make all gol gappas.

Sweet chutney:

  1. Soaked tamarind in water make pulp.
  2. In a pan add tamarind pulp, jaggery and red chili powder, cumin and salt cook until thick.
  3. Sweet chutney is ready.

Green chutney:

Blend all the ingredient, make a thick paste.

Sour water

  1. Mix all the ingredient in water.
  2. The water should be tangy and spicy, stain water and keep in fridge to chill or add ice if required.

Serve gol gappas:

  1. Make a hole in the center add gol gappas fill it with chickpea some potatoes top with green chutney, sweet chutey, yogurt, chaat masla.
  2. Serve with sour water. enjoy!
