Ingredient:
Beef/Mutton 1 kg
Wheat 2 cup
Barley 2 cup
Rice 1cup
Red lentil(masoor daal) 1/2 cup
Green gram split(moong daal) 1/2 cup
Split chick pea lentil(chana daal) 1 cup
White lentil(mash daal) 2 tbsp
Ginger garlic paste 2 tbsp
Mixture of ground spice powder 2 tbsp
Red chili powder 3 tbsp
Coriander powder 3 tbsp
Turmeric powder 1 tbsp
Cumin roasted and crushed 2 tbsp
Salt to taste
Green chili 4 chopped
Lemon 2
Chaat masala 2 tbsp
Mint leave 1/2 cup
Green coriander 1/2 cup
Brown onion 1 cup
Julienne ginger for garnish
Method:
- Wash all lentils soak over night(max. 8 hours)
- Again wash the soaked lentils.
- In a pan add 6 cup water add all soaked lentils boil all lentils, cool and blend.
- Soak wheat barley over night, next morning cook wheat barley with 8 cups of water on low medium till tender, cool and blend.
- Boil rice, add salt during the boil to maintain taste.
- In another pan add oil add slice of onion fry till light golden add ginger garlic paste and saute on medium heat.
- Add meat and stir on high heat, add chili powder, coriander powder, turmeric salt,cumin covered and cook.
- Add 4 to 6 cups of water cover and cook till tender, then mash beef very well with hand blender.
- Now assemble all the ingredients together. beat well combine all the ingredients (this step known as ghonta ).
- In hot oil add onion slices fry golden brown give tadka on haleem.
- Add mixture of ground spice and chat masala cover for half an hour very low flame to mix up all the ingredients together.
- Serve with chopped green chili, chopped coriander, mint leaves, ginger slice, lemon.
