Ingredients:

For preparation stock

Mutton 1 kg

Funnel seed  1 tsp

Coriander hole  1 tsp

Onion 2

Black cardamom 2

Small cardamom 2

Star anise 2

Black pepper 10

Ginger  1 piece

Garlic 1 pod

Clove 6

Cumin  1 tsp

Bay leaves 2

 Salt to taste

Water 8 cups

Ingredient

( Rice  Yakhni Polao)

Oil 1 cup

Rice 750 g

Black cardamom

Cinnamon 1 inch stick

Clove 5

Black paper 6

Ginger garlic paste 1 tsp

Chili powder 1 tsp

Green chili grind 1 tsp

Brown onion 1 cup

Yogurt 1 cup

Salt to taste

Method:

prepare yakhni (stock)

  1. Make a spice bag with 2 onion, funnel seed 1 tsp, ginger 1 piece, garlic 1 pod, black cardamom 2, cinnamon 1, black paper 10, bay leave 2, small cardamom 2, cumin 1 tsp, star anise 2, whole coriander 1 tsp.
  2. Place this bag in a pan with mutton and 8 cups water.
  3. Cook till mutton nearly done and 4 cup stock left.

For Prepare polao

  1. Heat oil add hole spice for yakhni polao with ginger garlic paste fry by adding little water.
  2. Add brown onion and yogurt fry well add boiled mutton.
  3. Cover and cook for 10 minutes then left over stock when cook boiling add soak rice,  cook medium flame for 10 minutes.
  4. Heat then lower heat, cook 15 minutes till done.
